The "One Pot" Hearty Soup

I called this the "one pot" soup because once again... I threw everything into the slow cooker and wala....one tasty hearty soup! It has the meat, the grain, mixed veggies and.. bean! Other than serving this as soup, you can heat through and serve straight right up as a side or as a main dish over rice with a few shreds of cheese. I actually eat this myself as dinner, just this soup itself will fill me up; while Skyler prefers this over rice. :)

The "One Pot" Hearty Soup



















Ingredients:

2 tbsp Butter
1/2 red onion
5 cloves Garlic- minced
1/3 lbs Ground beef
1/4 cup Bow tie pasta
1 Yellow squash
3 sticks celery
2 tomatoes- diced
1 can tomato sauce
1/3 cup of mixed lentils and bean- rinsed
Salt
Dried Oregano
Italian seasoning herb
Sugar
 Grated Parmesan Cheese
Water

Cooking Instruction:
- Cooked pasta according to manufacturer instruction, set aside
- Marinated meat, add Parmesan cheese, Italian seasoning herb, little salt to the ground beef

- Using a large fying pan, heat up the butter, add in the onion and Garlic. Let cook until it turns brown
- Add in the ground beef, stir fried until it is almost cooked
- Add in celery and yellow squash, let cook for a minute, then stir in the diced tomatoes and tomato sauce, cook for a few minutes.

- Add in enough water, lentils & bean, dried oregano and let cook until water boil.
- Turn to medium heat and add in the sugar and salt until it reaches taste that you like.
- Transfer the whole pot of soup to the slow cooker, cook high setting for 3 hours.

Note: You can cook the soup on the stove for one hour or until the lentils and bean are cooked. I preferred slow cooker as it is just too easy without have to worry about it once setting is done.
